This knife is brand new and Unused but it is stamped "factory seconds" and I bought it from the factory.  It is a "seconds" because it has blemishes or staining on the blade.  It does NOT affect the cutting edge of the blade not does it compromise the integrity of the knife, its a cosmetic issue.  The staining is most prominent on the back side of the blade (see the 5th photo).  If you know high carbon steel, you know it can and most often does stain.  Read more about high carbon steel below. I have lowered my usual price because of it.  You can now get a 50% discount! *** Dexter calls this knife a "Ham" Boning Knife (HB). Same business day or next business day shipping.  I strive to ship the same business day.                                                                                                                                                                                                   319/00lis/30bub260T/789     High Carbon Steel can and often does stain or even rust.  Always wash and thoroughly dry the knife after each use, especially if used on acids like lemon or garlic. Apply a light coat of food safe oil, such as  mineral oil before storing the knife, if you so desire.  Even with the utmost care, high carbon can still sometimes stain.  Remove stains with "Barkeepers Friend" which sold in department and grocery stores and also on ebay (make sure the powder is dissolved thoroughly before rubbing the blade or scratches may result).  I have found a few grocery stores that sell Barkeepers Friend for much less money than on ebay.  Of course ebay is much more convenient.  And listings change constantly, so check out ebay before going to the store.  You can also use a watery paste made of baking soda and water. Why put up with all this care?  Because lovers of high carbon know that the blades are extremely sharp to begin with.  And an edge is easy to put back on a blade that has lost its edge.
