You will love this wonderful and versatile oven! We have used it to bake crusty, rustic artisan bread for many years in a successful NYC bread bakery. The oven provides a great crust and good color on all types of bread. This oven is very easy to use, has lots of steam, very reliable, manageable by one baker, and is not too tall so even a shorter baker can see the bread in the top deck. It's a great starter oven for an artisan bakery. We have also used it to bake brownies, cookies and sticky buns, and thin crust pizza. We are reluctantly selling the oven since we no longer have the space. Gas fired, stone hearth, steam tube deck oven with steam on each deck. The oven has 3 decks, 6 doors, and a relatively small footprint for a stone hearth bread oven. This oven is in excellent condition, has great steam and bakes evenly on all decks! Original purchase date June 1992. The oven was used from June 1992 to June 1996 as our only bread oven. From 1996-2005 it was used very lightly for pastry and a small production of organic breads on a daily basis. From July 2005 to January 2013 (8 years) it was in storage. In January 2013 it was totally rebuilt with new stones, all new wiring, steam lines, all new insulation, and all the internal parts were cleaned and refurbished. From Feb 2013 to June 2015 it was used for pizza baking from 10 am to 3 pm daily and has been in storage for 1 year now. List price new in 2015: $65,150 Reassembly parts will cost: $5,000 - $8,000 and are available through FBM, Bongard dealer in NJ. Reassembly labor and expenses: $7,000-$8,000. It takes 3-4 days to reassemble. We have contact info for reassembly. Oven requires gas, water and electrical connections/supply.
