The versatile Victorinox 41525 Santoku knife is shorter, thinner, and lighter than the traditional Western chef's knife, making it an all-around excellent addition to any kitchen. Forged construction provides strength and durability. Only 7 inches tip to handle! Intended for dicing, mincing, and slicing, the Santoku knife has a strong, straight edge that provides even landing from tip to heel, and is meant to get the job done with a single downward cut. This style of blade incorporates the sheep's foot spine design, and is full tang meaning it's constructed of a single piece of steel, adding to the precision, performance, and durability of an already exceptional knife. When used on a cutting surface the sheep's foot blade design offers superb control, giving you the ability to use your fingers along the dull back edge for guidance and additional pressure, while the Granton edge makes separating meats, vegetables, or cheeses from the blade smooth and easy. The POM handle is a single piece, full tang construction, ergonomically designed to reduce tension in the wrist and triple riveted for maximum durability. The forged granton edge blade is hot dropped for greater elasticity and strength. Ice tempering hardens the blade dramatically allowing it to sustain its sharpness longer and withstand a lifetime of re-sharpening. A conically ground edge made of high-carbon stainless-steel ensures better retention, fracture resistance and minimized friction when cutting.
