In this case, contrary to the so called “forced air cases”, the air is not manipulated at all. It is left static. As best as I could, I have drawn some arrows on the case that points to an evaporator that sits below the light. There, there is a serpentine, which is a longer coil that gets frosted cold when the case is on. The warm air that comes in contact with that, it becomes immediately cold and falls down (because cold air always falls down while hot air rises) softly on top of the gelato. The more air heats the evaporator, there more it gets cycled from hot to cold and keeps the product very cold without freezing it as forced air does. This in my estimation, will lengthen the life of the product from a couple of days to a week, or more. While the cold air falls from above, the bottom of the case is kept frozen by the same refrigeration system and that is also the top of the compartment below where you keep an equal number of pans as back up in the frozen compartment accessible with a door. Pick up from our warehouse We are located in Arlington, Texas, in the heart of the DFW Metroplex, very close to the DFW airport, Six Flags Over Texas, and the Cowboys Stadium. If you are nearby or would like to come visit, one option is to pick up your item(s) directly from our warehouse. This is free of charge! 2. UPS For items weighing less than 50 lbs., we recommend UPS. By default, we set up our listings with UPS Ground, and the price is calculated based on the weight of the item and your location. If you need faster shipping, just let us know and we will work with you to arrange it. 3. Truck (Weight-based shipping) For items weighing more than 50 lbs. that you would like delivered to your door, shipping by truck is the option for you. Forward Air Another option that we offer for items weighing more than 50 lbs. is with a carrier called "Forward Air" that ships between terminals near most major airports. To reduce charges, they accept freight and pick-up from their terminals. We bring the freight to them, they bring it to the terminal nearest you, and you pick it up from there.
