This type of knife is the norm in many restaurant kitchens. The High carbon stainless steel is very easily maintained with a sharpening steel. The white polypropylene handles have built-in antimicrobial protection. I work in a restaurant and these are what I use all the time. Brazil is known for making excellent cutlery at very reasonable prices. This one is a Tramontina 10" commercial chefs knife.
