The backs are 3 times as thick as the standard Columbia 10” Chef’s Knife. They are very heavy, so the weight and thickness will have no problem breaking a shell. Flip them around and they are heavy duty chef knives with really sharp edges. They weigh 15 oz each, whereas a Dexter Russel V-Lo chef knife weighs about 6. Using the backs of standard chef knives for this task is a mistake - it can ruin your knives too! We sharpen them before shipping, giving you a better-than-factory edge that will cleanly slice through notebook paper. These are nice, solid, heavy Lobster knives that will get the work done.
