# S 133-7. Fillet Knife. Sani-Safe. Sani-Safe knives are built to be both tough and sanitary. A textured, slip-resistant, easy-to-clean polypropylene handle withstands both high and low temperatures.  An impervious blade-to-handle seal provides the utmost in sanitary performance. Stain-Free, high-carbon steel blade, with an individually ground and honed edge. Excels in commercial use. 7-Inch High Carbon Stain-Free Blade Narrow ( 5/8-inch wide) Blade Textured White, Highly Visible Polypropylene Handle Sani-Safe with an Impervious Blade to Handle Seal NSF Rated This knife is what I would call "semi-rigid" or "semi-flexible". Made in USA MSRP: $27.05 This knife is stamped factory seconds (see 6th photo). The person who etched it really did a poor job, but its purely a cosmetic thing.  I believe the knife was deemed a second is because the blade is a little too long, as it  measures        7 3/8-inches instead of 7-inches. See the 7th photo and you can see that the blade should have been inserted into the handle just a tiny bit more. That's it! Because of that, you get this knife at a great discounted price.
