Halo Heat® technology, powered by unique thermal cabling, produces gentle, precise heat to evenly cook your food. Significant moisture retention relates to longer holding life and extra servings from each item prepared. Capacity – 240 pounds, 108 kilograms (120 pounds, 54 kilograms per cavity), 8 full-size/GN pans (4 full-size/GN pans per cavity) Halo Heat - No fans, forced air or added humidity allow for greater moisture and even cooking. Greater yield & better quality - Halo Heat tenderizes even the toughest cuts of meat by activating their natural enzymes. Meat stays tender after several hours, or even overnight.
