Here is what they said, "This tank is typically used for aseptic processing of fluids like milk continuous process, the product is heated, for low acid aseptic, to 280 F, held for a brief period of time, enters the flash chamber where it is cooled by evaporation of some of the liquid. The port at the top is for removal of vapor, product enters the chamber via the tangential inlet so that it swirls around the inside of the tank chamber to better expose the product to the vacuum effects, and there is a sight glass port to hopefully better understand what is happening in the tank chamber. It is also used for deaeration of fluids. By flashing 5 degrees F, along with moisture removal, effectively all dissolved oxygen is also removed from the product to prevent oxidation with extended shelf life fluids.Approx.
