Sadly, we closed our donut shop on Friday (11-31-14).  This top-of-the-line Belshaw donut production system is only 4 years old. It has been carefully maintained and is currently fully operational. This production system described by component below, allows for the  automatic sheeting of dough, cutting of donuts, bismarks, and long johns, the proofing of all yeast-donut products, the cutting and dropping of cake donuts, and the frying, conveying, glazing, and cooling of yeast and cake donuts products.    The LVO SM224 Production Table Sheeter combines the features of a Production Table with that of a compact, high efficiency machine. The infeed conveyor belt carries the dough to the sheeting rollers where it is sheeted in two gradual stages.   When used as a Donut Production table for yeast fried goods, the dough is sheeted and cut with cutters automatically and uniformly. Rotary cutters are available for donuts, bismarks, long-johns, croissants and turnovers. You can also sheet basic sweet dough, danish and puff pastry. The TMKVI Thermomatic Proofer is designed for high-volume production of uniform yeast-raised products. The temperature and humidity in the proofer are continuously controlled; the air is reconditions every eighteen seconds. The Donut Robot Mark VID donut fryer is designed to automatically cut and fry cake and yeast-raised donut products.  This Mark VID comes with a flat stationary stainless steel table.   The Type F Donut Cutter is designed to cut cake donut products and deposit them into the Donut Robot Fryer (and a a variety of other fryers).  It is designed to be mounted on a wall, or on a column, attached to the fryer.   The EZ Melt, Fill and Filter Model EZ34 is designed to be used with Belshaw Fryers.  It performs four functions:   It melts shortening, it holds shortening, it supplies shortening to the fryer kettle, and it filters used shortening for re-use The Accumulating Conveyor (DC) is designed to transfer donut products from fryers to accessory equipment and to change the direction the donut products are moving.  It is designed to be used between the out-feed end of the Belshaw Fryer and the Glazer,  and then the Cooling Conveyor. The Glazer is designed to glaze donuts, either completely or just on the top and sides, also to transfer the donuts from one piece of equipment in the production system to the next.  This system creates a “waterfall” of evenly distributed glaze.  The amount of glaze is adjustable by the operator. The Cooling Conveyor is designed to provide ambient or forces air cooling and to turn the product over before glazing.
