Why are the brass dies so good? Brass is the traditional material from which pasta extruding dies are made. The friction created by the brass creates the rough surface texture that is authentic and will hold a sauce better than pasta made by any other method. Some dies are supplied with Teflon inserts for a smoother, more modern finish. What pasta shapes can be made using Lillo Due, Inver 3, PM80, Inver 7, or PM 96? There are a wide range of optional die shapes and sizes available by special order here in this listing with individual prices based on Model and Die type. All dies in this listing are special order from Italy. It is impossible for us to stock every die for every machine. Some of these dies will be in stock at the Bottene Factory others will have to be made to order. Lead time is 1 to 2 weeks after you place your order. What size are these brass dies and will they work on other Pasta Machines? Some dies may work on other machines but we will not confirm that. We can only provide you the diameter of the inner die and outter die. There are 2 parts that make up the die . The smaller measurement is the inner circle which has the openings in the die for pasta to extrude. The outside diameter is the measurement of the outside circle of the entire die. LILLODUE dies are mm. 49-59 INVER 3 dies are mm. 59-69 INVER 7/PM80 dies are mm 69-79 PM 96 dies are mm 86-96 How do I clean these brass dies after use? Do not try to clean them after use, please store them always in water immediately after use and change the water periodically so no mold grows. I have personally used a steam cleaning device toothpicks and an air compressor to clean them like new but it is time consuming and not necessary unless you are anal like myself. Soak them in water so the pasta in the die remains soft. Never let it harden or your die could be ruined. How do I order a die? When you place your order simply tell us which die number or name you want and we will order it. Ebay already will tell us which machine you want it for and the price will be adjusted for your choice automatically. There is a discount on shipping for multiple die orders and it is calculated by ebay in your order. Why are there 2 different lasagna dies ? The fixed lasagna die is not adjustable but you can choose one of three thickness's mm. 0.8 or 1.0 or 1.2mm . When you order a fixed lasagna die you must choose the thickness. The fixed lasagna die will work with the AV90 dough roller sold separately. The adjustable lasagna die cost has an adjustable thickness from mm. 0.7 to about mm 2 but it will not work with the AV90 dough roller. The adjustable die is $25.00 more. When you order please tell us if you want fixed or adjustable and we can invoice you accordingly. Which dies work on which machine?
