The drip tray is below the barbecue and sufficient to hold grease for months, so you won’t have to clean it every day. Please know that people prefer grilled hot dogs and sausages rather than steamed. STEAM TABLE The steam table on the California hot dog cart is double and can accommodate various size pots and lids. You can use the steamer for the buns, chili and sauerkraut. You can also steam your hot dogs since the steam table has its own burner and shut off valve. The stainless steel pans and lids (2 spillage pans, 6 1/3 pans and 2 roll tops1) are included and easily removable for cleaning. These are NSF approved and listed. SINKS (4 total) The California hot dog cart has three ware washing sinks with hot and cold water. Each ware washing sink is large enough to accommodate the largest utensil. Ware washing sinks are 12" wide x 12" long x 10" deep. Each ware washing sink is equipped with a mixing swivel faucet capable of providing hot water at a minimum of 120 degrees Fahrenheit and cold water at 99 degrees Fahrenheit or less as required by law. The hand washing sink is separated from the ware washing sinks by a metal splashguard with a height of 8". The hand washing sink is 12" wide x 9" long x 10" deep. The hand washing sink is equipped with a mixing swivel faucet capable of providing hot water at a minimum of 120 degrees Fahrenheit and cold water at 99 degrees Fahrenheit or less as required by law. WATER HEATER The water heater on the California hot dog cart is capable of heating water to a minimum of 90 degrees Fahrenheit. It has a capacity of 4 gallons and it is interconnected to the potable water tanks. WATER PUMP The California hot dog cart is equipped with an electrical water pump capable of delivering a minimum of 1 gallon per minute of hot and cold water. POTABLE WATER TANK The 4/5 gallon potable water tanks on the California hot dog cart are sufficient in volume to fulfill the required 5 gallon minimum for hand washing and the 15 gallon for ware washing and food preparation. WASTEWATER TANK All waste lines on the California hot dog cart are connected to the wastewater tank with watertight seals. The wastewater tank has an air vent water flow to prevent potential flooding of the interior of the cart. Both compartments have a door with a safety latch. UMBRELLA The two 9 feet market umbrella on the California hot dog cart could be green, navy blue and some other colors (your choice). The umbrella holders are at each side of the cart, which gives you perfect shade. No need to clean and it is much cheaper and faster to replace. 15 years of experience selling hot dogs will tell you that a vinyl umbrella needs to be clean with a brush and soap in an open space once a week from the dust and the grease. HEATING SOURCE The grill and the steam table on the California hot dog cart run on propane. There are two propane tanks stored neatly and easily-accessible behind a door with a safety latch in its own propane compartment located in the front part of the cart. It holds two twenty-pound tanks, so you will not run out in the middle of the day. Tanks are not included. TRAILER The California hot dog cart rests on a D.O.T. approved heavy duty trailer (title available) with baked enamel finished.
