 These are the HIGH END of the Dexter lineup of professional chefs knives. I absolutely love the Connoisseur series but have no use for these particular knives. The Carving/Butcher knife - I think it is new and I never used it. The Cimeter knife is razor sharp and I used it to cut large roasts down to manageable pieces. It has a few scratches on it -but still very presentable and functional.  The 14" blade on the  roast slicer is used and needs a sharpening since it had been improperly sharpened in the past.A real pro (someone who knows what they are doing)needs to re-sharpen it again.  I will pack carefully, check my feedback  Happy cooking      Thank you            Joe
