Technically, this is called a Forward, Right-Angle Poultry Boning Knife. It is used in the processing plant on chickens and  other poultry. The knife edge is forward on the outside of the blade. It is angled and the handle is positioned to be used in a downward motion.  Although this is deigned for poultry, I am sure there are other applications it could be used for. I believe it is used to separate the thigh from the body. The downward motion allows you to apply much more pressure. The angled handle provides an ergonomic design for less fatigue and more downward pressure. Textured Polypropylene Handle DEXSTEEL, Stainless Steel Blade.
