If you are looking for a beautiful, authentic, reliable espresso machine, this is the machine for you.  Reminiscent of "Old World" Italy, this lever machine will brew the perfect cup of neapolitan espresso! The main 2 differences between a lever espresso machine and to a traditional espresso machine is the following:  1. A lever machine has no pump to push water above the coffee to extract it.  In fact, the pressure is given by the springs (2x coaxial into the group head) inside the brewing group, the highest pressure you get is about 13 Bar (when springs have the maximum compression), which goes gradually and proportionally down while the lever goes up, so releasing the springs.  2. Also, is that the lever machine takes water directly from the boiler and not through an heater exchanger.  This allows the water inside the boiler to be recycled more frequently then by machine with heater exchanger and there is no need for a pump. HOW TO BREW ESPRESSO BY THIS BEAUTIFUL MACHINE: The first step is to fill up the filter basket with coffee and press it properly. Then put the basket underneath the group and pull it, making sure that it is in the right position. Pull the lever down, holding it always firmly in your hand. Wait 8-10 seconds or until the spouts starts to drop. Release the lever slowly up and leave it until the cups has been filled to your desired level. There are some variances, which you may adopt, to all the above steps that will effect also on the final result of your cup of espresso. For example: If you let the group flush a bit of hot water before you put the filter basket underneath, this optimize the temperature and the bland hot water/steam coming from the boiler, to get a perfect pre-infusion. By waiting longer then 10 sec., after the dropping of the spout, you’ll let the hot water persist a bit into the coffee so the coffee taste will be more aromatic. HOW TO RELEASE THE LEVER BEFORE THE EXTRACTION IS ENDED 1. Hold (with one hand) the filter holder. 2. With the other hand, pull back the lever until the spout starts to drop 3. Then very slowly release the filter holder until the remaining pressure drops down. Questions?
