The 2 half-moon castings ride on a rod and press the knives into their proper setting against the tension of the springs, making knife changing a breeze. Keeping an extra set of sharp knives around makes it easier to change knives, as when you pull the dull knife out, pop the fresh knife in, saving you having to dissassemble the gib bars and little springs.
