S.) Water   Capability: This Beer Box will produce a continuous pour of Ice Cold, Foam-Free Beer, so long as the 60 x  5/16” Stainless Chilling Coil is submerged in Ice & Water and the BEER supply temperature is under 50F.   BEER Temperature: The colder the Keg, the Less Heat the Coil has to remove and the Colder the beer will Pour. Pre-cooled Keg of 50F or below will prevent foam and eliminate any wait time between pours. To pour without foam, the Beer must be under 39F when it flows out the spout and colder is better.   BEER Pressure: For a moderate pour rate with optimal chill and foam free pour, we suggest a CO2 setting of 14 -16 PSI. Sustaining carbonation requires a CO2 Pressure of 11 -18 PSI otherwise over or under carbonation occurs. Each brewer recommends a pressure that tastes best and keeps the right amount of CO2 in their Beer. If the BEER supply warms, then longer between pours is required to sustain the spout temperature under 39F,  required to avoid BEER foam. Cooling the Keg with Ice in a half-barrel or trashcan is the simple cure.  Explanation: Carbonated Water or Seltzer water is CO2 Gas dissolved in water under pressure and Pressure is required to keep  it in dissolved. Release pressure and the gas escapes, appearing like boiling water, because in a sense it is.  If you ever popped a warm can of soda, then you know the results, but most soda doesn’t foam. Instructions on Assembly and Use of the Jockey Box The Fittings come clamped on the lines and only require connecting to the Box and CO2 Bottle. Fill the Box with Ice and Water, making sure the top of the coils and shanks are submerged. Attach the Regulator to the CO2 Tank, open valve and adjust pressure to12 PSI with stopcock in Off. Install Faucet to the Faucet Flange using the enclosed Spanner, do not over tighten and Close Faucet. With Coupler Handle UP, insert the base between two tabs into Keg mouth, twist 1/4 turn clockwise to lock. Open CO2 Regulator Stopcock by a 1/4 turn to sending CO2 to the Coupler. Soap joints to check for leaks. TAP Keg by pulling Coupler Handle out, then also down, once down, stop pulling and push it in to lock it. Beer should now flow from the Keg to the Box and CO2 should be heard flowing from Regulator to the Keg. The Keg is now Tapped and Beer should be flowing from the Keg through the chilling coils to the Faucet. Clear the lines by holding a glass under the spout and opening it until the foam clears, discard the draw. You are now ready to serve lots of ICE Cold BEER!
