How It Works The Nemox Gelato, Ice Cream and Frozen Dessert Maker uses a self contained freezer system consisting of a compressor, condenser, fan, evaporator and CFC-free refrigerant. This design is very similar to a household freezer, but in a compact design. This allows you to make delicious frozen desserts such as frozen yogurts, sorbets, ice cream, sherbets and frozen drinks not possible with conventional ice cream makers that use pre-chilled containers. Compressor type frozen dessert makers bring ingredients to lower temperatures that would not be possible with chilled canister type units. Low fat recipes need lower temperatures to produce a desirable consistency of the end product. These units provide greater versatility and professional results to your frozen desserts. Making Ice Cream Preparation of the Mixture Prepare one of the suggested recipes or one of your own favorites. You can use any recipe for ice cream, frozen yogurt, frozen dessert as long as the recipe does not contain more than 3 lbs. of ingredients. This will allow for volume to increase during churning to maximum capacity. Use peeled fruit and ingredients free of any waste matter. Always chill the ingredients in your refrigerator before pouring into the machine. This will reduce the time required to make the ice cream. Ice cream mixtures will stay fresh in the refrigerator for a few days. Shake well before pouring the mixture. Operating with the Fixed Bowl Place machine on flat surface. Do not obstruct the ventilation slots on the side of the machine. Connect the power cord into an electrical outlet. Press the freezing switch on the body of the machine to switch on the compressor. Allow the compressor to run for at least 5 minutes to start cooling the bowl before pouring in the mixture. Place the churning blade into the fixed bowl by turning clockwise until it drops in place. Pour the prepared pre-chilled mixture into the mixing bowl. Place the lid on top of the mixing bowl and lock in place to start the paddle churning. Select the timer up to 60 minutes for the desired churning time. Timer rings to notify time is complete and shuts off the churning blade. The compressor will continue to run to keep the ice cream cold. If more time is needed for the ice cream to reach the desired consistency, turn the timer back on for additional minutes. This will restart the churning blade. When the ice cream is complete, turn off the timer if the churning blade is still turning and press the freezing/compressor button to the off position. Remove the ice cream by spooning it out then remove the churning paddle and the remainder of the ice cream. Operating with the Removable Bowl. If using the removable bowl, pour 3 ounces (80ml) of alcohol or any liquor into the fixed bowl. As an alternative, use a salt and water solution of 2 ounces (80ml) of water and 1 ounce (20g) by weight of salt. This solution surrounds the removable bowl and contacts the fixed bowl and allows for better transmission of low cold temperatures from the fixed bowl to the removable bowl ensuring better ice cream production. Follow the remaining steps 1-6 for use with a fixed bowl. Cleaning After ice cream is removed and the mixing bowl is no longer cold, a damp cloth, sponge or towel can be used to remove residue before washing. All parts are cleanable in warm soapy water. Storing Ice Cream When the ice cream is ready, it can be left covered in the ice cream maker for approximately 10-20 minutes. Ice cream tastes best when it is fresh. If you wish to store ice cream in the freezer use an airtight container and store at 0°F or below. Recommended storage periods: Ice cream made from with fresh raw ingredients - up to one week. Ice cream made with cooked ingredients - up to two weeks Sorbet or yogurt based ice cream - one to two weeks Defrosted or semi-defrosted ice cream must never be put back in the freezer. Remove the ice cream from the freezer about thirty minutes before serving and place it in the refrigerator. Or bring it up to serving temperature by allowing it to stand for ten or fifteen minutes at room temperature.
