"TOBA": This knife is named after a super-volcano located in Sumatra that erupted approx. 75,000 years ago.  The blade is long and  similar to the Santoku design. This professional chef knife is ideal for slicing,  dicing, and fine chopping due to it's balance and lightness. The hollow ground knife is for either right and left handed chefs. The blade is made from one of the finest cutlery steels available, American made 154CM high carbon stainless steel hand polished to a mirror finish.  This steel is known for its’ ability to keep a razor sharp edge with a hardness of 60 to 62 and resistance to pitting and rusting.  We carve our handles out of a special tiger acrylic that gives this design a very unique look and feel. If you spend hours in the kitchen, this is a great knife to add to your collection. The making of these knives involves artistry and craftsmanship and abundance of time. All Saba Knives are handcrafted in Virginia, USA and carry a lifetime guarantee.  Total length 11.5",blade length 6.5"
