We have had great success with Smoking' Tex Smokers over the years and this is no exception! We purchased two of these units last year for our concession trailer but one is all we need. The Smokin' Tex CXLD 1500 is a true commercial grade smoker, NSF approved and can smoke up to 120 pounds of meat at one time. But this unit is also a great smoker for the home barbecue enthusiast. Getting great tasting smoked meats, chicken, fish or smoked cheese could not be easier. Simply place from four to six chunks (around 8 ounces) of your favorite wood or wood combinations...dry, not wet...set your temperature and let the Smoking Tex do the work! No need to restock the wood or anything else. This unit uses a standard 15 amp outlet. You can select heating with 700 watts or 1400 watts. We smoke at 1400 watts for around 14 hours for pork and 16 hours for brisket. Chicken is done in 4.5 hours and baby back ribs in about 4 hours. The meat is always tender, juicy and great flavor. This will hold full size restaurant pans and has heavy duty racks that you can clean in a dishwasher. The Smoking Tex units are so well made, they come with a two year warranty. We bought ours last April so take comfort in knowing that this has all this year and then some protected by their warranty. We first began using the smaller home smoker from Smoking Tex and our family and friends raved about how good the meat was. From there we took the leap to do this commercially and our customers have said we have the best pulled pork and brisket. This unit has always been used out of the weather and is in great shape.
