There is a water drain in the bottom of the pan so the water can easily be drained daily. The make and model sticker is missing. There is one gas control knob to control your temperature. Gas is the most efficient way to heat your water. Steam is the best way to keep your cooked food hot and at the proper serving temperature. Comes with an 8" x 62" removable cutting board that is 1" thick. Contains 4 full size hotel pans. All stainless, came out of a working restaurant and is ready to use. Has an 8" wide stainless steel shelf under the cutting board along with a full size bottom shelf for convenient storage. A very nice steam table. Thanks for your interest, Bill Boyda, Pres.
