Enormous knives like this have often been sold as bread knves, bakers' knives and simply as serrated knives, but its original purpose was for cleaning and cutting large fish into steaks, from sockeye salmon to giant bluefin tuna. Made in France by Deglon, one of that nation's finest cutlery companies, it was made with a strong and sturdy 13" stainless steel blade (knife is 18" long overall) that's toughly serrated on a single bevel (right-handed) like a sushi knife, VERY sharp and capable of gliding right through fish bones, so you can imagine how helpful it would be to chef and butcher alike--as well as fishmonger. Handle is a solid piece of blue POM that is virtually indestructible, delivering a sure and ergonomically correct grip; you could use this knife all day long without fatigue. This piece more than lives up to Deglon's reputation for excellence and one needs to hold it in hand only once to fully appreciate what it is capable of. Truly, the value of such a knife is limited only by the imagination of its user. As serrated knives go, it is among the very finest ever conceived and certainly one of the most massive. It has a number of outstanding details that differentiate it, but the true star of this piece is, in my view, the incredible performance it will deliver to the user, from carving a 100lb. grouper into dinner for 150 of your closest friends to slicing the largest grand-daddy French loaf money can buy into sandwiches for to feed a school bus full of kids.
