Each compartment has a dry heating element. You put water in the pan and then put your food pan inside of it, like a double broiler. Keeps hot food HOT with steam so your food does not dry out. Manufacture plate is missing, it looks like a Duke. 86" long x 34" deep x 34" high. Has a handy stainless steel storage shelf underneath. Each compartment has its own heating control, from 100 to 200 degrees adjustable. All stainless, very clean, works great. Comes with an 11" serving board. Each well is 9" deep.
